Litha calls for fresh
fruits and veggies, especially those of the sunny
colors of red, yellow and orange. Orange Honey Butter
2 Tablespoons Grated Orange Rind

Deer & Elenya Peach Praline Muffins 1 2/3 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup packed brown sugar 1/2 cup milk 1/3 cup vegetable oil 1 egg 1 teaspoon vanilla extract 1 cup chopped fresh or frozen peaches, thawed and drained 1/2 cup chopped pecans

Topping: 1/4 cup packed brown sugar 1/4 cup chopped pecans 1/2/ stick melted butter or margarine
In a large bowl, combine the flour, baking powder and salt. In another bowl, combine the brown sugar, milk, oil, egg and vanilla. stir into dry ingredients just until moistened. Fold in peaches and pecans. Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
Melt 1/2 stick butter in small bowl. Combine brown sugar and chopped pecans in another bowl. Carefully dip the tops only of the cooled muffins into melted butter, then into pecan mixture to coat. Return to wire rack to cool topping.
Midsummer's Night Tea 2 cups dried mint (peppermint or spearmint or combine 1 cup each) 1/2 cup dried marjoram 1/3 cup dried whole savory leaves 1/4 cup dried lavender flowers
Mix thoroughly and store in tightly covered container. To use, steep one teaspoon per cup in freshly boiled water for 10 minutes, or to taste.
